Easy Almond Gluten-Free Cake

This might perhaps be the easiest gluten-free cake you can make. It only requires 4 main ingredients and tastes delicious. The cake itself is light but moist enough and leaves a sweet taste with a pop of lemon in your mouth every time. It’s hard to believe that this cake is actually gluten-free. Here are the steps you can follow to create a gluten-free almond cake.

Almond flour
Lemon zest

Preheat your oven to 350 degrees Fahrenheit
Separate 4 room temperature eggs.
Now mix in a large mixing bowl you four eggs yokes and half a cup of sugar and beat them together with an electric mixer for about 3 minutes. Make sure that it is thick and light in color.
Add one and a half cups of almond flour to the mixture and one tablespoon of fresh lemon zest. Use a specula to fold all these ingredients together.
Now in a different large mixing bowl add the egg whites and beat them for around 2 minutes with your electric mixer
Add one spoon of egg white mixture to your almond mixture and fold them together just until they are mixed well. Continue this process until all the egg white is mixed together with the almond mixture.
Grease a 9’’ pan. You may use butter or cooking spray for this. Line the bottom of your pan with parchment paper and add the mixture to your baking pan. Spread the mixture out evenly in the pan and add some almonds on the top.
Bake your mixture at 350 degrees Fahrenheit for 30 minutes or until it is golden brown and the top feels firm.
Let it cool for around 10 minutes before you remove it from the pan.

A good way to remove your cake after baking is to move the specula around the corner of the cake to loosen it a little. After the cake comes out of the oven the nice smell of freshly baked almonds will hang in the air for some time. Don’t forget to remove the parchment paper from the back of your cake. You don’t have to but it always tastes better when you dust it with some powdered sugar. No frosting is required on the cake but if that is your thing do go ahead and put some on.

This cake is great for people that can only eat gluten free cakes but also when unexpected guest drop by. You only need 4 ingredients for it and it bakes in 30 minutes or less. If you want to add some personality to your cake lemon slices always do the trick because they are a clear indication to your guest that the cake contains some lemon.
