Raw Blueberry Cheese Cake

Blueberry cheesecake is something most people enjoy. What makes this recipe interesting is the cashews and walnuts that is added to the mixtures. Like the title said you don’t have to bake this cake to eat it. Preparations for this cake shouldn’t take you longer than 15 minutes in total.
Here are the ingredients you will need for this cake:

9 oz cashews
4.25 0z walnuts
4.25 oz desiccated coconut
4 tbsp cocoa powder
6 tbsp coconut oil
100 ml coconut milk
0.5 tsp vanilla bean seeds
4 tbsp lemon juice
7 oz blueberries

Method:
Put the cashews in a bowl and add. Soak them for at least 5 hours.
After the soaking process, you want to add fresh water to the cashews and keep them nearby.
In your mixer put the 4.25 0z walnuts together with the 4.25 oz desiccated coconut, 4 tbsp cocoa powder and mix them well together. When the mixture is all brown it is ready.
Put the mixture in a mixing bowl and mix the ingredients well together.
Grease your baking time and add the mixture to it. Make sure that it is spread out very well at the bottom of the baking tin because this layer will only form the foundational layer of your blueberry cake.
Put the mixture in the freezer for around 20 minutes
Meanwhile, add the 100 ml coconut milk to the cashews that you soaked earlier.
In the same bowl as the cashews add 4 tbsp coconut oil, 1 tbsp honey ½ tbsp vanilla bean seeds and mix them well together with your electric hand mixer. The mixture should be in a fine creamed form after you’ve mixed it.
Divide the cashews mixture in half where you use the one half to add 4 tbsp of lemon juice and mix it well together.
Spread the lemon juice cashews mixture on the dry ingredients that you stored in the fridge for 20 minutes. Refrigerate this for about 20 minutes.
Take the other half of the cashews mixture and add 7 oz blueberries to it. Mix them well together in your electric mixer. Your mixture should be purple colored once finished and the berries should no longer be identifiable in the mixture.
Now add the blueberry mixture on top of the other layer of cashew mixture. Spread it out properly.
You’ll have to refrigerate this for about 1 hour before it is ready to serve.

Although this recipe might seem a bit complicated it tastes delicious. If you are not someone for baking, this recipe is ideal for you as the most part of this recipe relies on refrigerating the ingredients. Even though this cake contains blueberries you may experiment and make use of other ingredients for your top layer such as chocolate or strawberries. As time goes you might feel to change some of the other ingredients to your desire.
