Vegan Sponge Cake:

If you are vegan and want to bake a light cake but also have it spongy this is something you should try next time you’re in the kitchen. This recipe takes out all the complications of baking a vegan sponge cake with simple easy to follow instructions and ingredients.

Ingredients:
1¼ Cups Self Raising Flour
½ Cup plus ⅓ Cup White Sugar
1 teaspoon Baking Soda (Bicarbonate soda)
1 teaspoon Baking powder
½ teaspoon Salt
⅔ Cup Unsweetened Almond Milk (or other Non-Dairy Milk)
⅓ Cup Canola Oil
2 Tablespoons Apple Cider or White Vinegar
2 teaspoons Vanilla Extract

Method:
Pre-heat your oven to 350 degrees Fahrenheit
Mix together all the dry ingredients that include the self-raising flour, white sugar, baking soda, baking powder and salt in a bowl.
In a separate bowl combine all the wet ingredients that include the unsweetened almond milk( or your preferred choice of non-dairy milk), canola oil, apple cider or white vinegar and the vanilla extract (or vanilla essence). Stir them well together.
Make a little well in the center of the dry ingredients and add the wet ingredients to it. Mix both the dry and wet ingredients well together.
Grease a baking tin with some canola oil and add the mixture to the bowl.
Bake the mixture in a medium oven for 20 – 25 minutes.

To make your cake more light it is important to sift the flour into your mixing bowl. This adds more air to the mixtures thus a lighter cake. Because a sponge cake is based on pound cake you may draw some inspiration from a pound cake for creating interesting cake variants.
This simple recipe can be altered to your desire because of its simplicity. You may choose to make a chocolate cake or a lemon cake while still keeping your cake vegan.
Frosting on your cake is optional. Since you’re making a vegan cake it would make perfect sense to keep the frosting also vegan. You’ll need the following to make a vegan-friendly frosting for your sponge cake:
3 and 3/4 cups (450g) Powdered Sugar
3 Tbsp (45g) Vegan Butter
4 Tbsp (60ml) Soy Milk (or any other non-dairy milk)
2 tsp (10ml) Vanilla Extract

Method for the vegan frosting:
Add all the ingredients together in a mixing bowl this includes the powdered sugar, soy milk, vanilla extract and vegan butter.
Use the electric mixer to beat all the ingredients together. Start off on the low-speed setting and gradually build increase the speed until your mixture is smooth.
You mixture has to be thick but still spreadable. If your mixture is a little too thick you may add some soy milk to thin it but if its too thin you may add some more powdered sugar.
This frosting is ideal for you sponge cake because it is velvety, simple to make, delicious and smooth. The use of this frosting is not limited to this cake but you may also use it on cupcakes and cookies.
